The BEST blueberry pancakes!

This recipe is our pancake go-to! They are so light and fluffy and a breeze to make! Definitely best served drizzled in Canadian maple syrup, eh?!



Stuff you’ll need:

Bowls

Measuring cups and spoons

Spatula and whisk

Griddle or frying pan


1 cup all purpose flour

2 Tbsp white sugar

2 tsp baking powder

1/2 tsp salt

2 Tbsp melted salted butter

1 cup 2% milk

1 large egg

1 cup Greek vanilla yogurt


1 cup blueberries (optional)


1. To a large bowl add flour, sugar, baking soda, and salt. Lightly whisk together.

2. Add milk, egg, Greek yogurt and melted butter to the bowl and whisk until lump-free. Batter should be thick and fluffy.

3. Heat pan or griddle on medium heat and lightly grease with butter or cooking oil.

4. Using a spoon or 1/4 cup measuring cup scoop batter onto griddle.

5. Top each pancakes with 4-5 blueberries and flip when you see bubbles on the top. Cook for another 4 minutes or until golden brown.
