Strawberry Pop Tart!

Hello fun! We love making these sweet and delicious breakfast pockets. In this recipe we use strawberry jam but feel free to sub out for your favourite flavour! 

Stuff you'll need:

2 baking pans

Rolling pin

Measuring cups and spoons

Parchment paper

Medium pot 

Cooling rack

Heat proof bowls

1 egg

1/2 AP flour for dusting 

1 Ball of pastry (see below)

1 tbsp cornstarch + 2 Tbsp water (slurry)

1 cup icing sugar

1/2 cup sprinkles of your choice

1 jar of jam (see recipe below)

  1. Preheat your oven 375.

  2. Prepare your pan; line two baking sheets with parchment and set aside.

  3. Add your strawberry jam to a medium pot and bring to a simmer on medium heat. 

  4. While you're waiting for the jam to simmer, make your slurry by combining the cornstarch to the water and mix until smooth. 

  5. Once the jam has come to a simmer, add one tsp of slurry to the pot while stirring. 

  6. Remove the pot from the stove and pour into a heatproof bowl, allow jam to cool.

  7. Lightly dust the surface of your counter with flour. Dust the top of your dough as well. Roll pastry 1/8 inch thick and cut 12 4x3 inch rectangles.  

  8. Place rectangles on pan and add 1 tbsp of jam to the centre of 6 rectangles.

  9. Crack egg into bowl and whisk. Brush egg wash around the edges of each rectangle with jam. Using the 6 extra rectangles, place gently on top and press a fork around the edges to seal in jam. 

  10. Prick 6 -10 holes using a tooth pick in the top of each pop tart, allowing steam to escape while baking. 

  11. Bake for 20 mins, until pastry is golden brown.

  12. Cool pop tarts before icing and eating ;)

Strawberry Icing 

  1. In a bowl add 1 cup of icing sugar along with 2-3 tsp of strawberry jam and stir.

  2. Slowly add 1 tsp of water at a time, you don't want runny icing as it won't harden on the pop tart. Stiffer is better!

Spatula and wooden spoon

2 cup of fresh or frozen strawberries

1/3 granulated sugar

1 Tbsp of lemon zest (about 1 lemon)

1 Tbsp lemon juice

1. Add strawberries, sugar, lemon zest and juice to a heavy pot and bring to boil on medium heat.

2. Simmer for 10 minutes until strawberries become soft.

2. Pour in glass bowl and cool before serving.

4 cup all purpose flour

1 cup vegetable shortening

1 tsp salt

2 Tbsp white vinegar

2 large eggs

1/4 cup ice water

Stuff you’ll need:

small bowl

Stand mixer

Measuring cups and spoons

Plastic wrap


1. In a small bowl whisk eggs, vinegar and ice water until combined and set aside.

2. In the bowl of your stand mixer add flour, salt and vegetable shortening, mixer until pea size shapes.

3. Add egg and mix until dough forms, wrap with plastic and chill for 24hrs.
